I had no plans to make any this spring seeing how it’s been a weird kind of a year, but when Nathan called me up and said that he had a good price on organic bok choy from Clarion River Organics that had a few bug holes in it, I couldn’t resist.
I don’t mind eating leafy vegetables with bug holes in them. In fact, I’d rather not eat vegetables the bugs aren’t interested in eating.
Along with the bok choy are onions, carrots, daikon, red radish, chile flake, ginger, garlic, ramp and salt. The heat level on this batch is around medium.
