We made this for Ramadan in the spring and are bringing it back one more time! People loved it–even my kids who aren’t always so adventurous with new things. The Fair Trade Palestinian Freekeh we use comes to us from our friends at Equal Exchange (the same place we get the chocolate for many of our bakery items). It is traditionally made using an age-old process which includes roasting the wheat in the field over fire while it is still green. Cooked in our rich chicken stock with chunks of Locust Point chicken and freshly toasted and ground middle eastern spices, this is one you won’t want to miss!
